Operational Excellence
Support the General Manager in overseeing all daily restaurant operations.
Ensure opening, operating, and closing procedures are executed consistently across all outlets and service areas.
Conduct regular operational walkthroughs to identify and rectify service, maintenance, safety, and cleanliness issues.
Ensure smooth coordination between Front of House, Kitchen, Bar, and Stewarding teams.
Maintain exceptional standards of cleanliness, safety, and presentation throughout the venue.
Monitor staffing levels and labour productivity to support operational efficiency.
Guest Experience
Lead by example through an active and consistent presence on the restaurant floor during service.
Ensure every guest receives warm, personalized, and memorable hospitality from arrival through departure.
Anticipate guest needs and resolve concerns promptly, professionally, and with genuine care.
Build meaningful relationships with regular guests and VIPs to enhance loyalty and repeat business.
Continuously identify opportunities to elevate the overall guest journey and dining experience.
Monitor guest feedback, online reviews, and satisfaction metrics, implementing action plans to drive continuous improvement.
Leadership & Service Excellence
Foster a culture of ownership, teamwork, and accountability across all restaurant departments.
Conduct regular coaching sessions, performance reviews, and development conversations.
Promote a positive, inclusive, and high-performance work environment.
Ensure all service sequences, brand standards, and SOPs are consistently followed.
Drive continuous improvement through service observations, coaching, and regular calibration with leadership.
Lead daily briefings, in the absence of the GM, focused on guest experience, product knowledge, and service priorities.
Inventory & Asset Management
Oversee stock control processes for beverage, operating supplies, equipment, and consumables.
Ensure accurate inventory counts and reconciliation procedures are conducted.
Monitor stock movement, usage trends, breakage, and wastage.
Maintain operational equipment in excellent working condition through regular inspection and preventive maintenance programs.
Coordinate with Engineering and Facilities teams on maintenance requirements and capital replacements.
Compliance, Safety & Risk Management
Ensure full compliance with Marina Bay Sands policies, food safety requirements, liquor licensing regulations, workplace safety regulations, and company procedures.
Conduct routine safety inspections and operational audits.
Investigate operational incidents and implement preventive measures.
Ensure all employees are trained and compliant with health, safety, and emergency response procedures.
Maintain operational readiness for internal and external audits.
Cross-Functional Operations
Coordinate closely with Culinary, Stewarding, Engineering, Security, Hotel Operations, Premium Services, Marketing, Finance, and Facilities departments.
Support Marina Bay Sands integrated resort events, VIP activations, festive operations, and large-scale property initiatives.
Job Requirements
Education & Certification
Diploma/Degree in hospitality or related field preferred
Experience
Minimum 3–5 years of leadership experience in premium restaurants, luxury hospitality, or high-volume dining operations.
Proven ability to lead, motivate, and develop diverse teams.
Strong operational knowledge of food and beverage service.
Excellent communication, interpersonal, and problem-solving skills.
Demonstrated ability to remain composed and make sound decisions in a fast-paced environment.
Experience working with luxury guests, VIPs, and high-profile clientele is highly desirable.
