Position Overview

We are looking for an experienced and passionate Chef to join our restaurant team in South Buona Vista, Singapore.

The ideal candidate must have a minimum of 4 years of professional kitchen experience, with strong experience in Indian cuisine, particularly curries, tandoor dishes, kebabs, appetisers, biryani, breads and Indian-Chinese dishes.

The candidate should also be comfortable preparing, or willing to learn, a range of Western and Mexican dishes to support our broader restaurant menu.

We are looking for someone who is hands-on, creative, reliable and able to consistently deliver high-quality food in a fast-paced restaurant environment.

Key Responsibilities

Food Preparation & Menu Development

  • Prepare authentic Indian dishes, including curries, kebabs, appetisers, soups, biryani, breads and Indian-Chinese dishes.

  • Operate the tandoor and prepare tandoori meats, seafood, paneer, naan and other tandoor specialities.

  • Prepare traditional Indian sweets and desserts where required.

  • Prepare selected Western and pub-style dishes, including grilled meats, chicken wings, burgers, sandwiches, pasta, fish dishes, salads, fries and sharing platters.

  • Prepare selected Mexican-style dishes, including tacos, quesadillas, nachos, burritos, salsa, guacamole and related appetisers.

  • Maintain consistency in taste, portion size, presentation and food quality.

  • Develop new dishes, seasonal items and weekly specials.

  • Review existing menu items and recommend improvements based on customer feedback, food cost and operational efficiency.

  • Support the development of dishes suitable for sharing, bar dining, private events and promotions.

Kitchen Operations

  • Maintain high standards of food quality, presentation and consistency.

  • Use fresh ingredients, appropriate spices and proper cooking techniques.

  • Monitor inventory of meat, seafood, vegetables, groceries, spices and kitchen supplies.

  • Assist with ordering and maintaining suitable stock levels.

  • Control food portions and minimise wastage.

  • Maintain proper food storage, labelling and stock rotation.

  • Keep kitchen equipment, preparation areas and workstations clean and well organised.

  • Ensure compliance with Singapore food hygiene requirements, SFA regulations and applicable health and safety standards.

  • Follow proper sanitation and food-handling procedures.

  • Support food-cost control and efficient use of ingredients.

Team Collaboration

  • Work closely with chefs, kitchen assistants and service staff.

  • Support kitchen operations during busy service periods, weekends, sporting events and functions.

  • Maintain effective communication between the kitchen and front-of-house team.

  • Assist in training and guiding junior kitchen staff where required.

  • Support different kitchen stations depending on operational needs.

Requirements

Experience & Culinary Knowledge

  • Minimum 4 years of professional kitchen experience is required.

  • Strong experience in Indian cuisine, preferably North Indian cuisine.

  • Good knowledge of Indian recipes, spices and cooking techniques.

  • Experience preparing curries, kebabs, appetisers, biryani, breads and Indian-Chinese dishes.

  • Tandoor cooking experience is strongly preferred.

  • Experience preparing Western or pub-style food is preferred.

  • Experience preparing Mexican dishes such as tacos, quesadillas, nachos and related items would be an advantage.

  • Willingness to learn and work across different cuisines.

  • Previous experience in a restaurant, bar, hotel or similar fast-paced kitchen environment is preferred.

Skills & Competencies

  • Strong food preparation and cooking skills.

  • Good understanding of recipe development and execution.

  • Strong knowledge of spices, ingredients and flavour balancing.

  • Ability to maintain consistency across different dishes and cuisines.

  • Good food presentation and plating skills.

  • Experience in inventory and stock management.

  • Understanding of purchasing, portion control and food-cost management.

  • Good knowledge of food safety, hygiene and sanitation requirements.

  • HACCP knowledge or experience would be an advantage.

  • Good time-management and organisational skills.

  • Ability to work efficiently under pressure.

  • Ability to communicate effectively in English. Knowledge of Hindi or other relevant languages would be an advantage.
