About the Role:

The Chef de Partie – Pastry is responsible for producing high‑quality desserts, pastries, and baked goods that reflect Four Seasons’ standards of excellence. This role oversees the pastry station, ensuring precision in preparation, creativity in presentation, and consistency across all pastry items served in the hotel’s restaurants, bars, banquets, and In‑Room Dining.

What you will do:

  • Prepare, bake, and finish a wide variety of pastry and dessert items according to Four Seasons recipes, presentation guidelines, and portioning standards.
  • Oversee the daily operations of the pastry station, ensuring an efficient workflow and high production quality.
  • Manage mise en place for all pastry outlets, including breakfast pastries, afternoon tea items, plated desserts, and banquet production.
  • Ensure all pastry equipment and utensils are properly used, cleaned, and maintained in accordance with safety and sanitation standards.
  • Monitor quality and freshness of ingredients, ensuring proper storage and rotation.
  • Collaborate closely with the Pastry Chef to develop new items, improve existing recipes, and support menu planning.
  • Train and guide Commis Pastry and junior team members, fostering a culture of learning, precision, and creativity.
  • Work alongside other kitchen departments when needed, ensuring smooth operational flow across the culinary team

What you bring:

  • Solid pastry experience in a luxury hotel or high‑end restaurant environment, with strong technical cooking skills.
  • Fluency in English and Italian
  • 3+ years of progressive leadership experience in pastry or F&B management roles.
  • Ability to train, mentor, and inspire a diverse pastry team.
  • Strong knowledge of kitchen operations, inventory systems, and culinary production equipment.
  • A refined sense of aesthetics, attention to detail, and commitment to consistently high standards.
  • Excellent organizational, time‑management, and multi‑tasking abilities in a fast‑paced environment.
  • Strong communication and interpersonal skills, with the ability to collaborate effectively across departments
  • Knowledge of HACCP and food safety guidelines.
