About the Role:
The Demi Chef de Partie – Pastry supports the Pastry Chef and Chef de Partie in preparing, baking, and presenting a variety of high‑quality desserts and pastries in line with Four Seasons’ culinary standards. This role plays a key part in daily production, maintains exceptional cleanliness and organization within the pastry area, and contributes to the creativity and consistency of the pastry offering across all outlets.
What you will do:
- Prepare and finish pastry items such as cakes, tarts, desserts, doughs, creams, and breakfast pastries following Four Seasons recipes and presentation standards.
- Assist with daily mise en place for pastry operations including restaurants, banquets, and In‑Room Dining.
- Maintain an organized and clean workstation, ensuring all equipment is used and stored safely and hygienically.
- Support the Pastry Chef and Chef de Partie in executing new recipes, seasonal menus, and special event items.
- Ensure proper storage, labelling, and rotation of all ingredients to maintain freshness and quality.
- Uphold HACCP standards, consistently following food safety and sanitation procedures.
- Collaborate closely with colleagues and assist junior team members when needed.
- Communicate effectively with the broader kitchen team to ensure smooth service and timely delivery of pastry items.
What you bring:
- Previous pastry experience in a luxury hotel or high‑end restaurant environment, with strong technical cooking skills.
- Strong foundational skills in pastry techniques, including doughs, creams, baking, and simple decoration.
- Fluency in English and Italian
- 2+ years of progressive experience in pastry roles.
- Basic knowledge of kitchen operations, inventory systems, and culinary production equipment.
- Excellent organizational, time‑management, and multi‑tasking abilities in a fast‑paced environment.
- Strong communication and interpersonal skills, with the ability to collaborate effectively across departments
- You must possess the legal right to work in Italy
